I've been in the industry for over 22 years and I'm shamed to say that it's taken nearly that long to realise that the most important person that works for you is serving on the bar.
Why oh why do we not give our staff the training, time and incentives to get the best from them.
Many companies will tell you they train bar staff, but the reality is different.
So what have I done?
I simply took the idea from Mike Ashley, the owner of Newcastle FC and the brilliant Sports Direct. He simply incentivises his staff with profit share from sales. Not a new concept I hear you shout but show me a bar person in the same position. Rare a rocking horse s**t.
How many times have you asked staff to up and cross sell? How long does it last?
I've put the staff at Sanuk on 40p for every double they sell and a cut from every other extra product they sell. Nuts, bar snacks etc.
Double sales have increased 400% and the spend has gone up on Saturday by nearly £2 per head.
Staff are more motivated and you should see them go.
Next week we are introducing a guest list bonus. For every person they put on the guest list who pay £1 to come in, they get the £1. Simple.
With training in Responsible Alcohol Retail, Food Hygiene, product training and more, I think Sanuk must now have some of the best staff around.
